			<content:encoded><![CDATA[<p>Summer  is officially over <img src='http://healthysandiegoliving.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  and that means it’s time to get my butt back in gear! For the first time in a few years I took the whole summer off from school. I worked; I went on 2 vacations…<a href="http://healthysandiegoliving.com/?p=3060" target="_self">here</a> and <a href="http://healthysandiegoliving.com/?p=3221" target="_self">here</a>…and just had a LOT of fun! I went out with new and old friends, overindulged in a lot of<a href="http://healthysandiegoliving.com/?p=3314" target="_self"> DELICIOUS food</a>, drank a <span style="text-decoration: line-through;">little</span> lot of wine, and slacked off a bit in the gym. I still went almost every day (because I’m crazy) but I didn’t push myself too hard—I gave my body a much needed break.</p>
<p>But as much fun as I’ve had the past few months, I’m ready to get back to my normal eating and gym habits—fortunately, I love my veggies, green smoothies and being active so I don’t think I should have a problem reverting back to my old ways.</p>
<p>I started last night at the gym working on <strong>Biceps/Triceps/Shoulders</strong>. I did 2 different circuits, 3 times each with a few minutes of<strong> high intensity intervals</strong> mixed in-between each set. It kept me moving, my heart rate up and I feel really good today!</p>
<p>Tonight I shall conquer LEGS! Wish me luck&#8230;..I need it!</p>

<p style="text-align: center;"><em>4 Arnold® or Oroweat® Honey Wheat Sandwich Thins® roll, separated</em></p>
<p style="text-align: center;"><em>2 pints grape tomatoes, sliced in half lengthwise</em></p>
<p style="text-align: center;"><em>1 tablespoon aged balsamic vinegar</em></p>
<p style="text-align: center;"><em>2 tablespoons garlic infused extra virgin olive oil</em></p>
<p style="text-align: center;"><em>12 fresh basil leaves</em></p>
<p style="text-align: center;"><em>Kosher salt, to taste</em></p>
<p style="text-align: center;"><em>Freshly ground black pepper, to taste</em></p>
<p style="text-align: center;">Toast Sandwich Thins<em>®</em> halves to a light golden brown.</p>
<p style="text-align: center;">In a bowl, mix tomatoes with balsamic, olive oil, salt and pepper to taste. Stack basil leaves and roll them in the shape of a log. Slice the rolled basil, making ribbons. Toss most of the cut basil with the tomatoes, reserving a bit of fresh basil to garnish.</p>
<p style="text-align: center;">Spoon dressed tomatoes on top of each toasted Sandwich Thins<em>®</em> half and garnish with a few fresh basil ribbons.</p>

<p style="text-align: center;"><em>4 Arnold® or Oroweat® 100% Whole Wheat Sandwich Thins® roll, separated</em></p>
<p style="text-align: center;"><em>4 sundried tomatoes packed in oil; 1 tablespoon plus 2 teaspoons of the oil</em></p>
<p style="text-align: center;"><em>1 cup fresh ricotta cheese</em></p>
<p style="text-align: center;"><em>8 ounces mushrooms, chopped (use any kind you like)</em></p>
<p style="text-align: center;"><em>1 cup fresh baby spinach leaves, washed and dried</em></p>
<p style="text-align: center;"><em>Kosher salt, to taste</em></p>
<p style="text-align: center;"><em>Freshly ground black pepper, to taste</em></p>
<p style="text-align: center;">Preheat oven to 350 ° F.</p>
<p style="text-align: center;">Toast Sandwich Thins<em>®</em> halves just to light golden.</p>
<p style="text-align: center;">In a skillet, heat 1 tablespoon of the oil from the marinated sundried tomatoes over medium heat. Add mushrooms and cook until soft and moisture is released, about 5 to 7 minutes, and season with salt and pepper to taste.</p>
<p style="text-align: center;">Meanwhile, pulse 5 sundried tomatoes with 2 teaspoons of their oil in food processor until smooth and add ricotta. Pulse to incorporate and season to taste with salt and pepper.</p>
<p style="text-align: center;">Spread approximately 2 tablespoons of the sundried tomato and ricotta mixture on top of each toasted Sandwich Thins<em>®</em> half. Top with a few baby spinach leaves and divide mushrooms between each. Place pizzas on a baking sheet and bake for 3 to 5 minutes to heat and infuse all the flavors.  </p>

<p style="text-align: center;"><em>1 Arnold® or Oroweat® Multi-Grain Sandwich Thins® roll</em></p>
<p style="text-align: center;"><em>1 tablespoon thousand island dressing</em></p>
<p style="text-align: center;"><em>1 slice Swiss cheese</em></p>
<p style="text-align: center;"><em>3 oz smoked turkey, thinly sliced</em></p>
<p style="text-align: center;"><em>2 tablespoons sauerkraut, rinsed and drained</em></p>
<p style="text-align: center;"><em>Kosher salt, to taste</em></p>
<p style="text-align: center;"><em>Freshly ground black pepper, to taste</em></p>
<p style="text-align: center;">Preheat oven to 350 ° F.</p>
<p style="text-align: center;">Spread half the tablespoon of thousand island dressing on each half of the Sandwich Thins® roll. Top the bottom half with the cheese, then the turkey and last the sauerkraut. Finish with a pinch of salt and pepper, and add the top half of the Sandwich Thins® roll, thousand island side down. Bake for 5 to 7 minutes until the sandwich is warmed through and slightly toasted. Enjoy!</p>

<p style="text-align: center;">Couldn’t be happier about THAT! But it’s going to be a verrrrry busy weekend. I have the shower I’m throwing at my house on Sunday and quite honestly…I’m just not ready. Well I am and I’m not. I’ll be doing a lot of cleaning, shopping and decorating for the next 2 days, that’s for sure—I must love working under pressure because I always seem to do this to myself. :)</p>
<p style="text-align: center;">But the one things I didn’t lag on was the <a href="http://www.mixbook.com/" target="_self">Mixbook </a>I mentioned in my previous post—I cannot WAIT to give that to her!</p>
<p style="text-align: center;">For the past few days I’ve been having some stomach issues—I’m not really sure how to explain it exactly. On Tuesday I started getting what I thought was very strong heartburn, followed my intense stomach pains, body aches and the chills. So naturally I thought I was getting sick, but it’d go away, only to return every time I ate. I did some investigation and I believe the cause of my severe stomach pain is…VEGETABLES! We go out whole lives being told to eat them&#8211;most people don’t even eat enough. I happen to LOVE veggies and now I get punished for it?? How is THAT fair? <img src='http://healthysandiegoliving.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  Soooo I’m cutting back a little on the veggies, obviously not completely, to see how it affects my stomach. Yesterday I was already feeling better so I was able to get in a really great workout at the gym with my trainer. I worked on <strong>upper body</strong></p>

<p>Anyway, I had an appointment with a trainer last night to get some help with my workouts and to change things up a little bit. I’ve definitely learned that it’s important to not stay in the same routine too long—you’re body reacts to change and that’s what you want! As I was RUSHING to make my appointment I grabbed a bar out of the box of <a href="http://www.supremeprotein.com/index.php" target="_self">Supreme Protein </a>I received not too long ago-</p>

<p>It was perfect for getting me through my workout and tasted JUST like a candy bar—I don’t know if that’s a good or bad thing yet!</p>

<p>At the gym we worked on arms but unlike my basic, almost bodybuilding like workouts where I isolate 1 muscle group, we did more circuit training and had me constantly moving in order to burn more calories. And instead of JUST doing bicep curls I would squat AND curl, working both legs, arms and my core. We’ll be meeting again to work on some more things so I’m really excited to change things up and see how my body responds!</p>
<p>When I got home I was SO excited about a package that I received that I completely forgot to drink my protein shake; however, it was SO worth it. You may remember me mentioning that I was throwing a bridal shower a few months ago, and was asking for ideas—well the shower is this weekend! Anyway, I wanted to do something special for the bride and what I did was have everyone attending the shower send in their favorite recipes-I then used <a href="http://www.mixbook.com/" target="_self">Mixbook</a> to make a photo album/recipe book for them. It prints it out just like a real book and I couldn’t be happier with the results! I HIGHLY recommend this website for anyone who wants to create memories to last with their pictures! I’ll post picsof the book once I give it to the bride…</p>
