Vegan? Pumpkin Cookies!

It’s Sunday ONCE again–weekends just keep going by SO fast! I hope everyone enjoyed their speedy weekend…I know I did!

Friday night the boo and I took advantage of the gym being so empty and had a great workout! I did 20 minutes on the stairmaster and 10 minutes on the eliptical w/ 10 resistance. It was the perfect Friday night workout!

Saturday I was on a mission to find a pair of black boots–the same black boots I had last winter minus the hole that just started to appear in the bottom. Once I got a hold of them, we went to see Couple’s Retreat! Did anyone else see it? I thought it was great…so funny!

After the movie The Boo and I went to my FAVEThe Barrel Room! :) We sat outside and enjoyed the nice San Diego Fall weather. :)

Today was fun! I had a Twilight party with the BFF! Yep, Twilight PARTY! :) She’s actually the one who got me into reading the books–she was a huge fan before it became what it is now, before it was going to be a movie, before all the craziness! Anyway, she never saw the movie because she was worried it wouldn’t live up to the book (they never do) but we finally rented it and watched together!

I even bought these Twilight candies to make it more of a theme for the night

As for the movie…she liked it! The 1st half is a bit rushed; it doesn’t go into as much detail from the book that makes it so wonderful, but the 2nd half makes up for it. Can’t wait to see New Moon!

After the BFF left I thought I’d try to find a recipe to use the can of Pumpkin Puree I bought this week

this cool weather has been making me crave Fall treats and I thought Pumpkin Cookies would be perfect!

I searched online for a recipe and ended up finding one that I later realized was VEGAN! I should have known just by the ingredients but this IS what I mean when I say…not a CLUE in the kitchen! hahaha

BTW Does anyone have any recommendations on an Amazing cook book ? Something for beginners? I’d love some ideas!

But they definitely need some work!

I tried to modify the recipe a bit and I don’t think that was too smart since I know nothing about baking–I learned my lesson! They’re still edible so I’m not toooooo upset, I’ll just work on it.

I’m really looking forward to this new Cooking Adventure! As much as I complain about my lack of cooking knowledge, i really do enjoy spending time in the kitchen trying to make something delicious–stay tuned to see what I’ll be making! :)

  • I didn’t mean that in a bad way. I just reread my comment. I mean, if you are the only person eating your creations it’s okay that they’re not perfect.

  • Nice pumpkin creation! I bet they would be a bit better with some chocolate chips :) I’m still trying to come up with some new recipes, I like this one. “The Art of Simple Food” is a good cook book with lots of fantastic tips for cooking. Nick got it for me one Christmas and I really like it a lot.

  • I just made those cookies!! I added some carob chips for extra flavor! They have a different taste, for sure, I really like em though! :)

  • How To Cook Everything by Mark Bitman is a must have! He goes into detail about how long to cook things, how to chop or prepare them.

    Cooking Light has a lot of easy to make recipes as well, we got a huge cooking light cookbook at Sam’s for less than $20 and use it a ton.

  • I would recommend Betty Crocker for a good basic cookbook. There is a lot of good, basic info that will help you learn more and more how to cook!

    I LOVE going to the gym at off hours too. I was there late Saturday afternoon and was literally the only person out on the fitness floor. Good thing since I tend to sing out loud when I’m working out!! HA!

  • LOVE twilight…such an addict. Can’t wait for the new movie. We saw couples retreat on Friday and loved it- super cute.

  • the best way to learn to cook is to just try and make mistakes :) I’ve had some pretty bad ones in the past, but it’s always okay and you learn something new every time!

  • My sister is obsessed with the Twilight series. I think she read it 4 times already lol. Those cookies look pretty good

  • My cookbook recommendations are Joy of Cooking and Veganomicon. They both have some basic recipes (I learned how to hard-boil an egg thanks for JoC and V’con has a PERFECT hummus recipe) and can get you started in the kitchen. I let my friend borrow V’con (so if want to borrow it next, maybe we can do a meet up?) and she is LOVING it and she never knew how to cook before. Also, in Kensington (Adams Ave) there is a cookbook store that might be a little overwhelming at first, but if you have some time I’d say go in there and hunt around. I’m a little cookbook obsessed though, so I have to stay away from there or I’d buy the whole store!

  • Yay, experimentation in the kitchen is so much fun! I love the oats in your cookies! Your weekend sounds like it was so much fun. Believe it or not, I’ve never read Twilight (or seen the movie)…my sis is in love with the series though, so I’ve been meaning to read it!

  • I struggle with baking. I’ve found that using parchment paper and putting the cookie batter in the fridge for a few hours really helps make a beautiful cookie!

    I would keep in mind that baking is much harder to experiment with then cooking. With cooking you can taste as you go and add what it needs, baking is more of a science.
    I don’t often follow recipes for cooking but I almost always do for baking. Also – experiment in small batches!
    I would second the Mark Bittman How to Cook Everything suggestion. And mostly – have fun.

  • Regarding your comment on my blog, I couldn’t agree with you more! PEople need to learn how to say no, and that it’s OK to say no. Also, when I say no, people need to realize it’s not because I think I’m fat, it’s because I try to indulge in moderation! DUH! haha

  • I loved Couple’s Retreat! Um, Vince Vaughn is my dream man. Well, his sense of humor. So sassy, I love it!

    And I’m obsessed with Twilight, too. I’ve had the last book for….6 months? And I can’t bring myself to read it! I know I’ll be sad when it’s over. :-(

  • Cookbooks: Joy of Cooking, How to Cook Everything, Pillsbury Cookbook (I use this one a lot), Elie Krieger’s, anything Barefoot Contessa and I really do like Rachael Ray’s recipes.
    I loved the Twilight books but I didn’t like the movie. :(

  • I love Vegan with a Vengeance! For beginners, the Students Go Vegan cookbook is easy and good :)

  • Well, your cookies look very pretty, hehe! I’m so not a baker…I have only had success with the “bake and break” type cookies, so I’m impressed with your skills ;)

    I like the cookbook “Everyday Food: Great Food Fast.” It’s pretty basic, but has some great recipes! I checked on Amazon and there are copies on there starting @ $7.99!

  • My favorite cookbooks are all of Ina Garten’s. Every recipe turns out well and they usually aren’t too difficult.

    Yum!! I haven’t had anything pumpkin yet!
