I have a love/hate relationship with Sundays. I love that it’s pretty much THE day for rest and relaxation–I’m sure we all know why it is that I hate them…
Luckily we’re approaching a 3 day week which will probably make Monday WAY more bearable!
Sundays are also a day that I like to hang out in the kitchen and make use out of whatever it is that I’ve had in the fridge that hasn’t been used.
I roast my usual veggies

I sip on some wine.

And I experiment…

I sauteed some Grape Tomatoes with PAM until they were cooked and JUICY. Then I added some capers

I put it on top of some Spaghetti Squash, along with some salt and pepper

Had a plate with my wine and I was good to go!

But what kind of girlfriend would I be if I didn’t make some yummy comfort food for the recovering ACL surgery patient?!?!
I made The Boo some English Muffin mini Pizzas!

- tomato paste
- chicken
- mozzarella cheese
Voila

I had a few bites too and they were pretty delicious for something that was so easy to make!
SO excited for Thanksgiving this year! Usually I look down on the holidays–they just haven’t been the same since my mom passed away. But this year we’re going untraditional with no pressure and hopefully lots of fun!

Why suddenly everything pass so quickly? oh….. I know, because it’s THAT good!

I also feel that way about Sunday – I get the Sunday blues bigtime! Luckily, today is like Wednesday, not Monday.
That spaghetti squash and tomatoes look great!! I hate Sundays just like everyone else. I’m always thinking, “tomorrow, it’s back to the grind.” All that thinking about the next day ruins my Sundays!!!
Im the SAME way.. I wake up on Sundays and Im like crap “gotta work tomorrow”. Ya, not living in the moment!

I’m with you about Sunday…it’s maybe my least favorite day of all (or at least it’s tied with Monday!). Everything looks fantastic, especially your spaghetti squash and tomatoes! I hope you have a wonderful Thanksgiving!

I love/hate Sundays too. I love football and getting organized and ready for the week..but I hate that there is never enough time in the day!

Sundays can be good and bad…you either catch up with daily duties (cooking, cleaning…etc) or you spend the day in bed snoozing…
