I hope everyone had an amazing holiday with their family and friends!
I know it was a little tough for most to get out of bed this morning and head back to work but more holidays will be here before we know it which means…..MORE LONG weekends, YAY! I actually ended up taking Wed. off of work so 5 days off felt realllllllllly good!
I’ve recieved many emails from people asking about some of the things I made for my Thanksgiving feast, and one of the more asked about eats was the Vegan/Raw Cashew “Cheese.” So I thought I’d share the recipe with you guys since it’s SUPER simple and DELICIOUS!
I started by buying a container of RAW Unsalted Cashews. It’s important that when you make this you do it at least a day in advance as it has to do a lot of sitting and setting.

Soak the cashews in a bowl full of water for about 2 hours

Once they’ve soaked and have gotten soft, put them in a food processor or in my case, a Magic Bullet, with:
- 2 garlic gloves
- 2 teaspoons lemon juice
- 1/4 cup water
- 1 teaspoon of salt
And blend until it’s at your desired consistency

I LOVE garlic but for those of you who aren’t fans I would stick to 1 clove–2 was a little much but still very good, I mean honestly I could probably eat garlic whole! lol I DO love it! Unforunately for The Boo I’m a HUGE fan of onion and garlic and find myself eating them both quite often!
Anyway…
Once it’s blended, cover up and let it sit out for the rest of the day–Put it in the fridge overnight and by morning it should be ready to serve.

Do you ever find yourself haunted by a book that you continuously pick up, start reading, but inevitably set aside to read something else? Leaving it to collect dust on your shelf until that one random day it catches your eye, you pick it up and the cycle starts once again?!?!?!

This is THAT book for me–it’s the ONE book that I just can’t seem to finish! I don’t know WHAT it is because everytime I start reading it I’m incredibly intrigued and find myself absorbed in the story, even though I always have to go back a few chapters to refresh my memory….I mean it HAS been like 3 years and it’s like 1000000 pages!
Anyway I picked it up again today and am DETERMINED to finish it! I only have about………800 or so pages to go! Wish me luck!

Today was a quick gym visit! 20 minutes on the evil stairmaster and I was outta there. The Boo even came along for the ride, lifted some weights and did as much as he could handle, he’s such a trooper!
OK well I’m off to bed…goodnight!

The cashew cheese looks very interesting, I may need to try it. I did that with Wicked, I have picked up that book about 20 times and just can’t get into it.

ever since i started seeing cashews in place for cheese ive been baffled every time. still have not tried it!
