It’s Friiiiiiiiiiday!
Why is it that short weeks always seem longer? Hmmm
I have to say that yesterday was a MUCH better day—work went by relatively quick and no ceilings have caved in yet. (Knock on wood) So things are loookin up!
I’ve been stressing out a bit about time, basically about how I don’t have enough of it. I’m sure everyone wishes they had more hours in the day because sometimes it just feels impossible to get everything done.
So anyway, The Boo wanted to make things a little easier for me and since he got home before I did, he had this ready and made for me when I walked in the door

So sweet—He know how I love my veggies!
And he loves meat, so we split this before I made my Green Smoothie and got ready for the gym.

I made it with the usual and along with the ½ frozen banana, I also put in pineapple, mango AND a strawberry! I couldn’t tell what I could taste the most—there were a whole LOTTA flavors going on there.
*Spaghetti Squash*

I cut the SS in half to roast for 45 min. on 350–You can roast whole but it will take a bit longer.

Once they cool off, take a fork and start making SPAGHETTI! Just scrape along the inside with a fork and it should come out looking like this…


How cool is that? I may never go back to real pasta!
I had a pretty average sized Squash compared to others at the store–I’d say this one is enough for maybe 3 servings.
The whole process can be a little long but the great part about it is that you can seal it up, stick it in the fridge the night before and then heat it up when ready to use.

I wasn’t sure what I wanted to do with it yet, so I put it away for the night and I’ll figure something out tonight…any ideas?
I skipped out on the gym since I needed the SS to roast for 45, so I used my treadmill at home once again and made up my own little workout.
I started by jogging for 5 minutes and then sprinted for from 1-2 minutes. I was actually in the middle of a text convo with my friend, so after every few minutes I’d get off the treadmill, text and let my heart rate drop a bit, get back on and do it again–it made it a lot more fun!
I did this while my SS was roasting, so probably a total of 40 minutes.
I had the munchies once again last night and I had a new box of Fig Newman’s I’ve been meaning to try

I wasn’t too crazy about the taste, I guess I’ve never been a big fan though–So the Boo ate the rest and is pretty happy that he gets the whole box to himself now! lol
But I finally found what was calling my name last night, a little spoonful of HEAVEN!

I love that Dark Chocolate Dreams too!!!! I’ve had spaghetti squash once before….I don’t think I cooked it long enough though…yours looks good…may have to try again!! I would just put some marinara and veggies on it!! Enjoy!
I love spaghetti squash! I’ve never roasted it, but it looks awesome! I usually put half of it in the microwave with a little bit of water. I can never find the Dark Chocolate Dreams in the store. It must be THAT good!

I love spaghetti squash! I usually eat it cold on salad mixed with hummus…sounds strange, but it’s good! I’ve never had it in place of pasta but thought it might be good to do a half-and-half and bulk out a small portion of spaghetti.

You are giving me some great ideas this week!!!!!!! Squash is going on the grocery list too. I need some low starch options and that is a perfect one! I’m thinking tossed with pesto or a maybe a little homemade tomato sauce!?!
