Happy Sunday
I hope everyone had a wonderful weekend!
I started my Sunday off with Spinning once again, and left the class a complete sweaty mess…loved it! The instructor definitely kicked it up a notch from the last class which was great, I had been a tad disappointed with her lack of energy and enthusiasm 1st class, but it was like a whole new girl–we did a lot of hill climbing and even more sprints to a great mix she put together. One of my favorite parts about the class is the 3 minute free time she gives us before our cool down when she turns off the lights, blasts the music, and lets up do our own thang–there’s something about that time that gets me pumped up again after a loooooong class and I just pedal my little heart out!
Sunday is usually grocery shopping day–the fridge is usually empty and ready to be restocked for the week. Today I actually had a lot of things left over that I wanted to cook before they went bad:
- Spaghetti Squash
- Eggplant
- Tomatoes
- Brussels Sprouts
- Orange Bell Pepper
I guess I got a little ahead of myself last week!
I was already excited to make the Spaghetti Squash since I got through my 1st experience with it successfully a couple of weeks ago–so I knew I’d make that! Now what to do with a fridge full of veggies?

Throw them ALL together and roast them of course!
I also added some mushroom and onion.
While the veggies were roasting, I forked out the Spaghetting Squash I had prepared just before.

I seasoned and cooked them for about 20 minutes @ 400, tossing them halfway through.

I topped the “Spaghetti” with everything and voila

I was definitely in need of carbs after my morning SPIN, so I toasted a piece of some Whole Grain Flax & Omega-3 Bread–it’s so good that I don’t even put anything on it, I just eat it plain.

Of course dinner wasn’t completer without a glass of wiiiiiine! The BFF got me started on this delicious Chateau Ste Michelle Riesling that is out of this world yummy!

Now I just need to get everything ready for the week and maybe possibly have another glass of wine!

I love grabbing veggies and throwing them on a pan to cook. And, what a great way to get rid of veggies before they go bad! Love the spaghetti squash idea. I have GOT to get one of those, as I’ve never tried it before. I’m crazy, I know. They always look so good, and they are such a healthy alternative to actual spaghetti.
Ooooh, I LOVE roasted veggies, best way to have veggies ever by far! : ) I just got a spaghetti squash today and I’m excited to have it!
That dish looks amazing! I finally got some brussel sprouts and cooked then in the oven with evoo, salt, and garlic…they were pretty good but I think I overcooked them.
I need to try spaghetti squash- I have not seen it here yet!

I am a spinning instructor too…. definitely true that the energy level of the instructor has a direct impact upon the energy of the actual class. what a GREAT idea about giving the 3 free minutes at the end… no joke I am doing that for my next class!!! I do not need to turn out the lights though because the class starts at 7 and is surrounded by huge windows. so by the end of the class the room is very very dark! love it. and also– i must say that “pasta”/roasted veggie mix looks AMAZING.
p.s. i just clicked on your spaghetti squash link… is it really that easy!??? and what type of squash do you usually buy???

I was in the mood for spaghetti squash this week, but of course the grocery store around me decided this was the week to be out of stock. Yours looks great though!
Your spaghetti squash dishes really make me want to prepare some myself! I like that it’s such a unique and lighter spin on traditional pasta meals. Fab idea!
roasted veggies are the best! i need to start buying squash – the local stuff is just getting into my co-op and i am soooo excited!
