WELL it’s official—I love spinning! I took another class Sunday, Tuesday, going again tonight and hoping to make those my regular Spinning days. I’m still getting used to the whole process; how much resistance I need, how fast I should be going, and I’ve been called out on my bouncing (need to work on that.) Overall I think they’re all things I can work on so I can improve my technique. I just love the way I feel when I’m done with the class, always a big sweaty mess!
It’s been a very busy week so this is going to quick. I’m working out a schedule and hopefully things will settle down a bit so I can make something a little more exciting than veggies! lol But they ARE delicious! In this mix:
- Squash
- Zucchini
- Mushrooms
- Onion
- Bell Pepper
- Brussels Sprouts
- Eggplant
Can we say veggie OVERLOAD?! I made some new ones and threw in the rest of the roasted veggies from Sunday, SO good!

The Boo tried tried to re-create another amazing flavor from Food Should Taste Good–the Sweet Potato chips are so incredibly delicious. I honestly don’t notice a HUGE difference between the taste of these and the Multigrain but they’re still SO good!

They were super yummy–actually had crunch to them and everything! But I couldn’t stay away from the real thing

Yum, I LOVE sweet potato fries. I use a mandolin and cut them really thin, but yours look a bit thicker. I think I should try cutting them thicker because mine tend to burn easily!
I think your veggie plate looks very tasty. I especially love the mushrooms, my favorite veg
I bought zucchini today too, randomly, and cooking them in some balsamic and garlic. They were shockingly delicious. I am really learning to love veggies lately, can you tell?!

Yum yum yum about all your roasted veggies!! I can’t wait for my triathlon to be over this weekend so I can grocery shop and get cooking…roasted veggies and spaghetti squash are on the list! I have the squash on my counter just staring at me!! I’m also excited to try spinning after this training is done…I’ve heard it is the best workout.

We love the FTTG sweet potato chips! And spinning IS addicting. I am an instructor and it is a great high.
I’ve never tried the FSTG chips, but I’ve heard fantastic things about them. I love the veggie overload-it looks awesome!
I really want to get a Magic Bullet! Do you find it is easy to make smoothies with it? Also-love the big veggie plate. You had commented on my blog about the body bug, and I was wondering if you liked it. Does it work well?
I kind of want to join a gym just to take spinning classes after seeing your enthusiasm for them. I love being a sweaty mess after a workout too!
